A vibrant Vegetable Stir Fry bursting with flavor and nutrients, perfect for a quick weeknight meal.

Ingredients

  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas, carrots)
  • 2 tablespoons soy sauce or tamari (for gluten-free)
  • 1 tablespoon olive oil or sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Optional toppings (sesame seeds, green onions)

Instructions

  1. Heat the olive or sesame oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant.
  3. Toss in the mixed vegetables and stir-fry for about 5-7 minutes until tender-crisp.
  4. Pour in the soy sauce or tamari, tossing to coat the vegetables evenly.
