A cozy breakfast dish featuring soft sweet potatoes and creamy cottage cheese, sweetened naturally and spiced with cinnamon.

Ingredients

  • 2 cups sweet potatoes, peeled and cubed
  • 1 cup cottage cheese
  • 1/4 cup honey or maple syrup
  • 1/2 cup rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 egg (optional for binding)
  • Salt to taste
  • Butter or oil for greasing the dish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a baking dish with butter or oil.
  3. Combine the sweet potatoes, cottage cheese, honey or maple syrup, rolled oats, cinnamon, vanilla extract, and the optional egg in a large bowl. Mix well.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
  5. Bake in the preheated oven for about 30-35 minutes, or until the sweet potatoes are tender and the top is slightly golden.
  6. Serve warm and enjoy your healthy breakfast cobbler!

Notes
