A creamy cheesecake with a vibrant strawberry swirl, perfect for summer gatherings and special occasions.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 4 (8 oz) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup fresh strawberries, pureed
  • 1/4 cup fresh strawberries, sliced (for garnish)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs and melted butter until combined. Press this mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  4. Add the vanilla extract and mix well. Then add the eggs one at a time, mixing just until combined.
  5. Pour half of the cream cheese mixture into the crust, then drop spoonfuls of the strawberry puree over the mixture. Swirl with a knife to create a marbled effect.
  6. Pour the remaining cream cheese batter on top and again swirl with the remaining strawberry puree.
  7. Bake for 60-70 minutes, until the edges are set and the center is slightly jiggly.
  8. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
  9. Refrigerate for at least 4 hours or overnight before serving.
  10. Garnish with sliced strawberries before serving.

Notes

Ensure cream cheese is at room temperature for a smooth batter. Use ripe strawberries for the best flavor.
