  • 1 cup white rice
  • 1 pound large shrimp, deveined and peeled
  • 1/4 cup mayonnaise
  • 1 tablespoon Sriracha sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish)
  • Lime wedges

Instructions

  1. Rinse the rice thoroughly in a fine-mesh strainer under cold water until the water runs clear.
  2. Boil the rice in a medium saucepan with 2 cups of water over high heat.
  3. Reduce the heat to low, cover the saucepan, and let it simmer for about 18-20 minutes, or until tender.
  4. Remove from heat and let it sit covered for an additional 5 minutes.
  5. Fluff the rice with a fork and set aside.
  6. Mix together the mayonnaise, Sriracha, soy sauce, sesame oil, garlic powder, paprika, salt, and pepper in a small bowl to make the spicy mayo.
  7. Heat a large skillet over medium-high heat and cook the shrimp for about 2-3 minutes on each side until pink.
  8. Divide the cooked rice among serving bowls and top each with shrimp.
  9. Generously drizzle the spicy mayo over the shrimp and rice, then garnish with green onions, sesame seeds, and a lime wedge.
  10. Serve immediately and enjoy!

Notes

For added crunch, consider using chopped peanuts or crushed tortilla chips as a topping. Adjust the spice level by adding extra Sriracha to taste.
