A hearty and comforting breakfast casserole filled with potatoes, eggs, cheese, and optional sausage or bacon.

Ingredients

  • 2 cups diced potatoes
  • 6 eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar recommended)
  • 1/2 cup diced onion
  • 1/2 cup cooked and crumbled sausage or bacon (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the diced potatoes, eggs, milk, cheese, diced onion, and optional sausage or bacon in a large mixing bowl.
  3. Season the mixture with salt and pepper to taste.
  4. Transfer the mixture into a greased baking dish, spreading it evenly.
  5. Bake in the oven for 30-35 minutes or until the eggs are set and the top is golden brown.
  6. Cool for a few minutes before serving.

Notes

For a crispier texture, consider par-boiling the potatoes before mixing. Leftovers can be stored in the refrigerator for up to 3 days.
