Delightful bars combining creamy cheesecake and crunchy pecans with a gooey topping, perfect for any occasion.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons sugar
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup chopped pecans
  • 1/2 cup light corn syrup
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of the dish to form a crust.
  3. Beat the cream cheese in a bowl until smooth. Add sugar and vanilla, mixing well. Add eggs one at a time.
  4. Pour the cream cheese mixture over the crust, spreading evenly.
  5. Combine chopped pecans, corn syrup, brown sugar, butter, and vanilla in a saucepan over medium heat. Cook until bubbly.
  6. Pour the pecan mixture over the cream cheese layer.
  7. Bake for 30-35 minutes until set.
  8. Cool at room temperature, then refrigerate for at least 2 hours before cutting into squares.

Notes

Serve with whipped cream or ice cream, and can be frozen for up to 3 months.
