A vibrant salad that combines creamy feta with fresh cherry tomatoes, crispy cucumbers, and briny olives, all tied together with a zesty dressing.

Ingredients

  • 15 oz can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine Fresh Ingredients In a large bowl, combine the chickpeas, cherry tomatoes, diced cucumber, thinly sliced red onion, halved kalamata olives, crumbled feta, and chopped parsley.
  2. Whisk Together Dressing In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, minced garlic, salt, and black pepper.
  3. Dress the Salad Pour the dressing over the salad and toss gently to combine.
  4. Chill Cover and refrigerate for at least 15 minutes before serving.

Notes

Use fresh herbs for a bright flavor. Rinse chickpeas to reduce sodium.
