A comforting Lasagna Soup, combining the rich flavors of traditional lasagna in a simple, warm bowl perfect for weeknight dinners.

  • 1 pound ground beef
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 28 ounce can crushed tomatoes
  • 14.5 ounce can diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 sheets lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh basil

Instructions

  1. Sautéing the beef, onion, and garlic: In a large pot over medium heat, cook the ground beef until browned. Add in the diced onion and minced garlic, stirring until the onion becomes translucent.
  2. Mixing in the tomatoes and broth: Stir in the crushed tomatoes, diced tomatoes, chicken broth, Italian seasoning, salt, and black pepper. Bring this mixture to a boil.
  3. Adding the noodles: Once it’s boiling, add the broken lasagna noodles into the pot. Reduce the heat and let it simmer for about 10 to 12 minutes, or until the noodles are tender.
  4. Serving up with ricotta: Ladle the hot soup into bowls and top each serving with ricotta cheese.
  5. Garnishing with mozzarella and basil: Sprinkle shredded mozzarella cheese and chopped fresh basil over the top and serve immediately.

Notes

For additional heartiness, serve with crusty garlic bread or a fresh salad. Can customize with vegetables or change protein to suit your taste.
