1 cup cottage cheese
1 cup rolled oats
1/2 cup almond flour
1/2 cup honey or maple syrup
2 eggs
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1 cup fresh or frozen blueberries
A pinch of salt
Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
Combine the cottage cheese, rolled oats, almond flour, honey (or maple syrup), eggs, baking powder, baking soda, vanilla extract, and salt in a large bowl. Mix until well combined.
Gently fold in the blueberries.
Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
Bake for 20-25 minutes, or until a toothpick comes out clean when inserted into the center.
Allow to cool for a few minutes before transferring to a wire rack.
Notes
