Wholesome and flavorful muffins packed with protein from cottage cheese, perfect for breakfast or a snack.

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • A pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. Combine the cottage cheese, rolled oats, almond flour, honey (or maple syrup), eggs, baking powder, baking soda, vanilla extract, and salt in a large bowl. Mix until well combined.
  3. Gently fold in the blueberries.
  4. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes, or until a toothpick comes out clean when inserted into the center.
  6. Allow to cool for a few minutes before transferring to a wire rack.

Notes

These muffins can be enjoyed warm or at room temperature. Pair with Greek yogurt and honey for a satisfying breakfast.
