Healthier Chocolate Chip Banana Bread

A lighter version of the classic banana bread, moist and bursting with banana goodness, studded with rich dark chocolate chips.

Ingredients

  • 3 ripe bananas
  • 1/3 cup melted coconut oil
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 cup whole grain flour
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mash the ripe bananas with a fork until smooth.
  3. Stir in the melted coconut oil until well combined.
  4. Mix in the brown sugar, egg, and vanilla extract until everything is nicely integrated.
  5. Sprinkle the baking soda and a pinch of salt over the mixture and mix in.
  6. Add the whole grain flour and mix until just incorporated.
  7. Fold in the dark chocolate chips gently.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes, or until a toothpick comes out clean.
  10. Let it cool in the pan for 10 minutes before transferring to a wire rack.
  11. Slice and enjoy your delicious, healthier creation!

Notes

Use very ripe bananas for the best flavor. Don’t overmix the batter after adding the flour to keep the bread tender.
