A modern twist on a classic favorite, this Garlic Parmesan Chicken Meatloaf is bursting with flavor and packed with protein, making it a healthier alternative to traditional beef meatloaf.

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1/2 onion, finely chopped
  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup garlic powder (for seasoning on top)
  • 1/4 cup additional grated Parmesan cheese (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper or lightly grease a loaf pan.
  3. In a large mixing bowl, combine the ground chicken, breadcrumbs, 1/2 cup grated Parmesan cheese, mozzarella cheese, parsley, minced garlic, and chopped onion.
  4. In a separate bowl, whisk together the eggs, milk, Worcestershire sauce, Italian seasoning, salt, and black pepper.
  5. Pour the egg mixture into the bowl with the chicken mixture and mix until combined.
  6. Transfer the meatloaf mixture onto the prepared baking sheet or into the loaf pan and shape it into a loaf.
  7. In a small bowl, mix together the garlic powder and additional grated Parmesan cheese and sprinkle over the top of the meatloaf.
  8. Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
  9. Remove from the oven and let it rest for about 10 minutes before slicing.
  10. Serve warm with your favorite sides and enjoy!
