Delicate and colorful French Strawberry Macarons filled with luscious strawberry buttercream, perfect for special occasions.

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar
  • Food coloring (red or pink)
  • 1/2 cup unsalted butter (softened)
  • 1 cup powdered sugar (for buttercream)
  • 1/4 cup strawberry puree
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a bowl, sift together almond flour and powdered sugar.
  3. Whisk egg whites and cream of tartar until soft peaks form, gradually adding granulated sugar until stiff peaks form.
  4. Fold in the almond flour mixture and food coloring until combined.
  5. Transfer the mixture to a piping bag and pipe circles onto the prepared baking sheet.
  6. Let them sit for 30 minutes to form a skin.
  7. Bake for 15-20 minutes, until the shells are firm.
  8. Allow them to cool completely on the baking sheet.
  9. Beat softened butter until creamy for the buttercream, then gradually add powdered sugar, strawberry puree, and vanilla extract until smooth.
  10. Pipe buttercream onto the flat side of one macaron and sandwich with another.
  11. Refrigerate for at least 24 hours to let flavors meld before serving.

Notes

For best results, sift your almond flour and powdered sugar, and ensure your macarons are made in a dry climate.
