A warm, hearty soup that captures all the flavors of your favorite egg roll in a single pot, perfect for chilly evenings.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound ground pork (can substitute with ground turkey or chicken)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons fresh ginger, grated
  • 4 cups chicken broth
  • 4 cups coleslaw mix (includes green cabbage, carrots, and red cabbage)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish, optional)
  • 1/4 cup chopped fresh cilantro (for garnish, optional)

Instructions

  1. Heat the vegetable oil in a large pot over medium heat until it shimmers.
  2. Add the ground pork, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  3. Sauté the diced onion, minced garlic, and grated ginger for about 2-3 minutes.
  4. Pour in the chicken broth, scraping the bottom of the pot to deglaze.
  5. Stir in the coleslaw mix until submerged in the broth.
  6. Add the soy sauce, sesame oil, rice vinegar, and red pepper flakes.
  7. Bring to a simmer, then reduce heat to low and cook for 10-15 minutes.
  8. Taste and adjust seasoning with salt and pepper.
  9. Serve hot, garnished with green onions, sesame seeds, and cilantro if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. This soup is not suitable for freezing.
