A warm and nutty Coffee and Walnut Loaf that merges robust coffee flavor with crunchy walnuts in a fluffy cake.

Ingredients

  • 250g all-purpose flour
  • 200g sugar
  • 100g unsalted butter, softened
  • 2 large eggs
  • 200ml brewed coffee, cooled
  • 100g walnuts, chopped
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a loaf pan.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Incorporate the cooled coffee and mix well.
  5. Combine the flour, baking powder, baking soda, and salt in a separate bowl.
  6. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  7. Fold in the chopped walnuts evenly throughout the batter.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  10. Allow to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For best results, ensure all ingredients are at room temperature. Toasting the walnuts enhances their flavor.
