A comforting and nutritious rice bowl featuring cozy sweet potatoes, tender chicken, vibrant veggies, and creamy avocado.

Ingredients

  • 2 sweet potatoes, diced
  • 1 lb chicken breast, cooked and shredded
  • 2 cups cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 avocado, sliced
  • 1 lime, juiced
  • 1/4 cup cilantro, chopped
  • 1/2 cup sour cream
  • 1/2 cup cheddar cheese, shredded
  • 1 tsp salt
  • 1 tsp pepper
  • Olive oil, for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C) to get things rolling.
  2. Spread the diced sweet potatoes on a baking sheet, drizzle with olive oil, season with salt and pepper, and roast for about 25 minutes or until tender.
  3. In a large bowl, mix the cooked and shredded chicken breast with the cooked rice, black beans, corn kernels, and chopped cilantro.
  4. Once everything is mixed, divide the chicken and rice mixture equally among serving bowls.
  5. Top each bowl with the roasted sweet potatoes.
  6. Place the sliced avocado around the bowl.
  7. Squeeze a generous amount of lime juice over the top.
  8. Add a dollop of sour cream.
  9. Finish it up by sprinkling shredded cheddar cheese on top.
  10. Don’t forget to season with additional salt and pepper to taste.

Notes

Store leftovers in airtight containers separately. Reheat sweet potatoes and chicken mixture together, and add fresh avocado and cheese just before serving.
