  • 1 cup coconut milk
  • 2 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon curry powder
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 tablespoon lime juice
  • Salt to taste
  • Chopped cilantro for garnish
  • Cooked rice or flatbreads for serving

Instructions

  1. Mix the flavorful marinade: In a bowl, mix together coconut milk, peanut butter, soy sauce, curry powder, minced garlic, minced ginger, lime juice, and salt until well blended.
  2. Marinate the chicken: Add chicken cubes to the marinade, ensuring they are well-coated. Let it sit for at least 30 minutes to soak up the luscious flavors.
  3. Heat the pan: Heat a pan over medium heat and add the marinated chicken along with all the yummy marinade.
  4. Cook the chicken: Cook the chicken for about 15-20 minutes, stirring occasionally, until the chicken is tender and fully cooked through.
