A creamy, spicy pasta dish combining smoky chorizo, tender chicken, and perfectly cooked penne in a luscious sauce.

Ingredients

  • 8 oz penne pasta
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 oz chorizo, sliced
  • 1 lb chicken breast, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. Sauté the onions in a large skillet with olive oil over medium heat until translucent.
  3. Brown the chorizo and garlic in the skillet until the chorizo is crispy and flavorful.
  4. Cook the diced chicken breast until no longer pink.
  5. Create the creamy sauce by stirring in the tomatoes, heavy cream, paprika, salt, and pepper; simmer for 5 minutes.
  6. Combine the cooked penne pasta with the sauce and mix well.
  7. Garnish with fresh parsley before serving.

Notes

For a healthier option, replace heavy cream with half-and-half and use whole wheat penne.
