  • 1 cup uncooked rice
  • 1 cup chicken broth
  • 1 cup queso cheese (or cheese sauce)
  • 1 cup diced tomatoes
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Add the diced onion, minced garlic, and bell pepper; sauté until softened, about 4-5 minutes.
  3. Add the diced chicken to the skillet and cook until browned, around 6-7 minutes.
  4. Stir in the uncooked rice, chicken broth, and diced tomatoes, ensuring everything is well combined.
  5. Bring the mixture to a boil, then reduce the heat, cover, and simmer for about 15-20 minutes.
  6. Stir in the queso cheese until melted and fully combined.
  7. Season with salt and pepper to taste, then serve warm.
