Apple Cinnamon Breakfast Quesadillas

A quick and delicious breakfast treat with cinnamon-infused apples and melting cheese, wrapped in a crispy tortilla.

Ingredients

  • 2 flour tortillas
  • 1 apple, thinly sliced
  • 1 teaspoon cinnamon
  • 2 tablespoons brown sugar
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • Butter or cooking spray for frying

Instructions

  1. Mix the sliced apples with cinnamon and brown sugar in a small bowl.
  2. Preheat a skillet over medium heat and add butter or cooking spray.
  3. Layer half of the cheese on one half of one tortilla in the skillet.
  4. Add the apple mixture over the cheese, then top with the remaining cheese.
  5. Fold the tortilla in half and cook for 2-3 minutes on each side until golden brown.
  6. Slice into wedges and serve warm.

Notes

Pair with a drizzle of maple syrup or Greek yogurt. Store leftovers in the fridge for up to three days.
