A delightful blend of sweet coconut, crunchy almonds, and rich chocolate, these Almond Joy Cookie Bars capture the essence of summer picnics and family gatherings.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup shredded coconut
  • 1/2 cup chopped almonds
  • 1 cup chocolate chips
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Mix the flour, rolled oats, and salt in another bowl, then gradually add to the butter mixture until just combined.
  5. Fold in the shredded coconut, chopped almonds, and chocolate chips.
  6. Spread the mixture evenly in the prepared baking dish and bake for 25-30 minutes.
  7. Cool before cutting into bars.

Notes

Store in an airtight container for up to 5 days or in the fridge for a week. These bars can also be frozen for up to three months.
